Punjabi Kadi Pakoda for October Indian Cooking Challenge

Hello friends,

When I heard and read about ICC (Indian Cooking Challenge) for October, of course, I had to prepare it right away. I was (am) going away on a 5 week trip to India, and so, even before I saw the recipe, I had already requested Srivalli that I won't be able to participate in this month's ICC. But, once I saw the recipe, I had to make it.

This is a very frequently made recipe in my house and loved by all. Usually, when I make it, I try to make it enough for at least 2 meals or people get angry... lol

This recipe is very similar to the one I make. I have a few kadhi recipes on my blog, so please do check them out as well.

Punjabi Kadi Pakoda - पंजाबी कड़ी पकोड़ा (Onion Fritters in Chickpea Flour and Yogurt Gravy)
Ingredients
For Pakoras
Besan / Chickpea Flour - 1/2 cup
Onions - 1 medium
Salt to taste
Red Chilli powder - 1/2 tsp
Water
Oil for Deep frying
For Kadi
Curds / Yogurt - 1 cup
Besan/ chickpea flour - 1/3 cup
Water - 3 - 4 cups
Mustard Seeds - 1 tsp
Cumin Seeds- 1 tsp
Ajwain/ Carom Seeds- 1 tsp
Methi / Fenugreek seeds- 1 tsp
Onion -1 large
Turmeric powder a pinch
Salt to taste
Red Chili powder - 1/2 tsp
Garam masala - 1/2 tsp
Amchur/ Dried Mango powder - 1 tsp
Preparation
For the Pakoras
  • Slice onions lenghtwise. In a bowl, take the chickpea flour, add salt, red chili powder. Make a batter with water to get a semi thick consistency.
  • Heat a pan/ kadai with oil. When it is hot, dip onions in the batter and gently drop into the hot oil. Deep fry until crispy.
  • Drain and keep aside.
For the kadhi

  • Make a paste with yogurt and besan, then mix with water to make a very thin batter.
  • Heat a tbsp of oil. Add a tsp each of mustard seeds, cumin seeds, carom seeds and methi. Let splutter for a few seconds.
  • Add onion slices, fry till they turn light brown.
  • Pour in the yogurt/besan batter, add turmeric powder, salt and red chilli powder.
  • Bring to a boil, reduce the heat and let simmer for at least half an hour.
  • Keep stirring occasionally.
  • When you feel it is pretty thick, add the reserved pakoras, bring to boil. Add garam masala and Amchur powder to the gravy just before removing from stove.

Serving
Serve them with warm rice or roti/paratha (bread) as you may like. My favorite is of course hot rice.

Guest Hosting "Cooking with Whole Foods (CWF) event

Hello friends,


Next 2 months, I am guest hosting CWF (Cooking with Whole Foods) event which has been started by Kiran. I am honored and excited to be hosting this wonderful and healthy event. Please check her blog for all wonderful delicious and healthy recipes she has posted. Thanks Kiran for letting me host this event. I owe you one :)


My STAR ingredient for this event is QUINOA. I have to admit that I did not even know about this one till I started my own blog and started following my blogger friends. My main inspiration to even try this ingredient was my blogger friend Priya. Please do check out her blog for n number of innovative recipes that she has tried and shared with us. Please do follow the link to Wikipedia above to know more about this grain. It is a very versatile grain and can be pretty much used anywhere where you would normally use rice or broken wheat or any such grain.

Molten Lava Cake - Sweet Punch for October !!!

Hello friends,

Molten Lava Cakes, ok, I have to admit that I cannot stop eating this one. I baked it last night and wanted to eat all just by myself. For a chocoholic like me, it was a challenge to save it for others too... lol 

If you have never had it, then you are surely missing on something and you have to try it out and if you have had it ever, then you know what I am talking about. 

I cannot thank Divya enough on choosing this sinful and mouth watering and lip smacking (I am running out of adjectives to describe it) recipe. Thanks Sweetheart !!!

Now, without further delay, here is the recipe.

Molten Lava Cake

Ingredients
Semi-Sweet Baking Chocolate – 4 oz (113g)
Butter – 4 oz (113g)
Eggs – 2
Sugar – 1/3 cup (75 g)
All-purpose Flour – 1/4 cup (40g)
Butter – for greasing ramekins
Preparation
1. In a double boiler, melt chocolate.
2. In a medium mixing bowl, beat Eggs and Sugar until light and fluffy.
3. Once chocolate is melted, remove pan from heat and add in butter. Mix until the butter melts fully.
4. Add chocolate/butter mixture into the eggs, add all-purpose flour and mix until well incorporated.
5. Butter bottom and sides of ramekins (small glass/porcelain bowls) and pour in mixture about 3/4 way full.
6. Place ramekins on a baking tray and bake at 350 degrees Fahrenheit (180 C) for 10 – 15 minutes. Shorter for gooey (molten) inside, longer for stiff inside.
7. Serve hot with vanilla ice cream.

P.S - Some people find it gross to have cakes with uncooked centers[not me!!] and feel the lava is nothing but uncooked batter.I have a solution for that too--if you feel so too,just place a chocolate chunk in between--pour half the batter into the ramekin and place a chocolate chunk,and pour the remaining batter and cook for a longer time than mentioned.You could also place cold ganache in between,choices are numerous!!

Tomato and Dates Chutney (टमाटर और खजूर की चटनी) - From Bong Mom

Hello friends,

Here is a delicious chutney associated with so many childhood fond memories. For our birthdays (me and my sisters), mom would always make poori (fried fluffy bread), ghugani (a dry yellow peas curry) and this tomato and dates chutney (sweet in taste). This was such a standard menu for our birthdays and we used to so eagerly wait for it the whole year.

This chutney is also associated with our memories of having bhoger khichuri (Khichdi, a lentil rice preparation prepared specifically for offering) during Durga Pujo days. This chutney is served along with begun bhaja (deep fried eggplan slices) and some mix veggie curry, all with no onion/garlic. And, weird thing is that this simple menu of these festive days tastes the most delicious. I mean whatever and however you may try this at home, it would never taste the same delicious. We used to get 2 haandis (eathern pots) full of bhog for us every day of 5 days of Durga Pujo from the pendal (the tent where the Goddess Durga's idol is kept). What fond memoies, I miss them. But, guess what I am visiting India during this very same Durga Pujo season and I am planning to enjoy it to the fullest after a lot of years :)

OK, now, after that nonmagical drive down the memory lanes, here is the chutney I had bookmarked a while back. I tried it from who other than my Bong blogger Friend, Sandeepa, famously known as Bong Mom to many of us. I was born in Chittaranjan, West Bengal (I am not a Bong btw, lol thought I will clarify) and spent half my life in Jamshedpur, so have a lot of Bengali influence in the cuisine I prepare. Anyways, what I was saying is, whenever I visit Sandeepa's blog and check her Bengali specific recipes, I can so relate it to a memory from my growing up times. She has an amazing collection of non Bong recipes as well. Please do check her blog for Tomato and Dates Chutney (टमाटर और खजूर की चटनी) recipe. I did add few bay leaves as my mom used to and I didn't have cranberries, so didn't use them.

Veggie/Fruit A Month - Apple, event hosting

Hello friends,

It looks like for last few posts, I have been apologizing a lot. So, here I go again. I apologize because of the delay in announcing this event. Actually, no excuses, but one of my blogger friends was going to host it, but somehow it didn't workout, so I waited till now and announcing it.

But, never-the-less, I am really proud and happy I get to host it again. After all, it is my baby... lol :)

I chose Apple as the STAR igredient for this Veggie/Fruit a Month event. You can get all the details of the event right here.

Do I even need to explain the benefits of Apple? Who has not heard the saying "An Apple A Day, Keeps The Doctor Away". Here is a lot of info on Apple.


There are few rules of this event:
  • ·         APPLE has to be the STAR of the recipe.
  • ·         It can be cooked in any way or can be in its raw form in the recipe. 
  • ·         It can be any course of the meal (appetizer/main course/side dish/dessert/beverage or breakfast/lunch/dinner/snack).
  • ·         Recipe has to be strict vegetarian (eggs are allowed). This is simply to re-enforce the fact that we can eat veggies without any meat and also for all our vegetarian friends, who do not eat meat.
  • ·         You HAVE to make new recipes and old archived posts are not allowed. This is just so that we try and make new fresh recipes :)
  • ·         Please send in your entries before end of October 31st 2010.
  • ·         If you are a blogger, you can simply send your Name and URL of your recipe at priya DOT mitharwal AT gmail DOT com with the subject of "Veggie/Fruit A Month - Apple".
